Hotdish is back at the St. Paul Winter Carnival — for a couple of days, at least — after a year’s absence.

Jerry Kane, owner of Kane’s Catering in St. Paul, wowed crowds in 2007 and 2008 with offerings like Tater Tot hotdish and seafood jambalaya served out of a giant tent next to the Landmark Center.

But last year his sponsor fell through and he couldn’t scramble in time to rent the tent and equipment to dish out scoops of the one-pot meals.

This year, Kane has rented a smaller tent and will set up at Fifth and Market streets on parade days: this Saturday for the Grande Day Parade and Jan. 30 for the Torchlight Parade.

And Tater Tot hotdish will be available.

“It has ground beef, Tater Tots, mozzarella, cream of mushroom soup, extra mushrooms, peppers — green peppers, cream and seasonings,” Kane said. “It outsells everything else 3 to 1.”

He’ll also be selling baked macaroni and cheese and chicken and wild rice soup.

“We’d like to keep on doing this in the future,” Kane said.
